Miyabi Evolution 8" Chef's Knife
Time-tested German engineering meets Japanese craftsmanship in the Miyabi Evolution 8" Chef's Knife. Miyabi Evolution knives are hand-honed in Seki, Japan, where the process involves more than 100 steps and takes 42 days. Each knife is made from revolutionary fine carbide FC61 steel (a material that is much denser than pure steel and Titanium) and is beautifully polished to a mirror finish. The ice-hardened blades are extremely durable and corrosion resistant while the ergonomic, triple-rivet handle supports both Western chopping and Asian rocking cuts.
